Adding A Probiotic To A Food Or Beverage Is Incredibly Complicated
Just a few short years ago, adding a probiotic organism to a food or beverage was an undertaking fit for only the most experienced food scientist. Dealing with issues like stability, the effects of secondary fermentation and endless adjustments to product pH were just a few of the technical challenges faced when formulating foods and beverages to contain efficacious levels of common genera of probiotics like Lactobacillus or Bifidobacterium.
For example, even seemingly simple formulations like frozen yogurt or ice cream involved massive formulation overages due to the frailty of the organisms used. Frequently overages as high as 3 to 4 hundred percent were required due to the formation of ice crystals which cause the organisms to burst before the product is even ready for shipping. Up until recently, these were valid concerns and led to a lack of probiotic fortified food and beverage options.
In 2008, a new probiotic option became available to the food and beverage industry opening the doors to a new world of probiotic fortification options and busted the myth that adding a probiotic to a food or beverage is incredibly complicated.
The probiotic, GanedenBC30 , is a patented probiotic strain that makes probiotic food and beverage formulation as simple as blending a dry powder into existing formulations. Measure, blend and voila – a probiotic fortified food with efficacious levels of the probiotic available to the consumer at the time of consumption. But how is this possible you wonder? First, let’s take a look at the ease of use of GanedenBC30 as compared to “traditional” probiotic strains.
Strains of Lactobacillus and Bifidobacterium are supplied in their living, vegetative states. That is, they are living organisms that require very specific environments to remain viable. GanedenBC30 , on the other hand, is supplied in its dormant form - resting and waiting to spring into action when the environment is perfect for germination. The dormant nature allows GanedenBC30 to be used in revolutionary ways. From baking mixes and hot tea to ice cream and refrigerated beverages, GanedenBC30 can be added to products in and out of the refrigerated section of stores. And unlike many traditional strains of probiotics, GanedenBC30 is stable throughout storage, manufacturing, processing, transportation and even preparation of the food or beverage.
Formulating with probiotics used to be a challenge that left the option of probiotic inclusions off the table for most food and beverage categories. But now, with the availability of GanedenBC30 , the options are limited only by the imagination of the formulator.
